Perfectedge Sharpening is the best. German, Japanese, Korean, Straight edge, serrated, single bevel or ceramic the do them all. They are actually the only sharpening company that many of the high end Japanese knife companies recommend.
They have a mobile service for restaurants and they also have drop off locations for the public. In SF the locations are: Cooks Boulevard, Cheese Plus and Hardware unlimited. They sharpen onsite at these locations every Monday.
